Gastronorm container 176x108x100 mm (stainless steel) KZ-GN1910 – how to choose the right one

The steel Gastronorm container KZ-GN1910 has a GN 1/9 footprint, i.e. 176 × 108 mm, and a depth of 100 mm. It holds 0.9 l and is intended for side dishes, sauces and ingredients served in small portions from a bain-marie or a heated counter.

At such a small footprint, one hundred millimetres gives a vessel that is clearly tall relative to its base. This works to advantage wherever maintaining temperature matters: a small surface area in contact with air means slower heat loss than in a flat pan of the same capacity.

The flip side of this proportion is reaching the bottom. A ladle fits in easily, but a short-handled spoon does not, so for thick pastes and toppings a shallower version is more often chosen, leaving the KZ-GN1910 for things that get poured.

How does this version differ from the 65 mm one in the same GN 1/9 size?

Only in wall height and the resulting capacity: 0.9 l instead of 0.5 l. The 176 × 108 mm footprint is identical, so both fit the same slot and take the same lid.

Can a container of this size be placed in a combi steam oven?

Stainless steel poses no restriction here. The limiting factor tends to be mounting – a single GN 1/9 will not rest on slides designed for 1/1, so it is placed on a sheet tray or in a dividing frame.

How do you choose a lid for this container?

The footprint decides, i.e. the GN 1/9 designation. The depth of the body does not matter, and a plastic lid fits a steel container just as well as a steel one.
