A polypropylene GN 1/6 gastronorm container measures 176 × 162 mm, 100 mm high, with a capacity of 1.6 l. This depth is the default setting in salad prep units and refrigerated counters, since it holds a reserve for several hours of work, and a spoon still reaches the bottom without effort.
At 1.6 l a station does not need topping up every half hour, which at the peak of service matters more than capacity alone. The cook swaps the container when there is a moment to spare, not when the ingredient suddenly runs out.
An opaque body requires the contents to be labelled if the container goes into the cold room overnight. At the station during work this does not matter, since the contents are visible from above.
