The KZ-GN1615 Gastronorm container is stainless steel in GN 1/6 size measuring 176 × 162 mm and 150 mm deep. It holds 2.4 l, which is enough to serve soup or a thick sauce over a longer stretch of service.

With liquid products, the tall wall works to advantage. The evaporation surface is small relative to the volume, so the load does not thicken at the top and does not form a skin as quickly as in a flat vessel of the same capacity.

Height, however, has its price when it comes to dosing. The ladle has to go in deeper, and when the vessel is not full, reaching for the remains can be awkward – which is why this format is usually swapped for a fresh one before it empties completely.

Will 150 mm fit in a standard bain-marie well?

In most appliances yes, but it is precisely this depth that tends to be borderline. Before purchase, the working depth of the well is checked together with the layer of water under the container.

When will a shallower container with the same footprint be better?

With products that get used up quickly and are meant to be replaced during service. The 100 mm version holds 1.6 l and makes it possible to serve a fresh portion more often instead of keeping one in the heat for hours.

Will the lid for the 100 mm version also fit here?

Yes. The lid is chosen for the GN 1/6 footprint, not for the height of the body – both versions have an identical collar measuring 176 × 162 mm.
