Gastronorm container 176x162x150 mm (stainless steel) KZ-GN1615 S – how to choose the right one

The steel GN 1/6 container with a footprint of 176 × 162 mm and a height of 150 mm has a capacity of 2.4 l. The deep form is useful wherever a product has to be submerged in liquid – for marinating, curing and storing in brine.

Full submersion is a requirement here, not a convenience. In a shallow vessel the top layer sticks out above the liquid and changes colour and flavour differently from the rest of the batch, which means the result can be uneven within a single container.

The compact footprint means several such vessels with different marinades stand side by side on one shelf of the cold room. Each corresponds to a separate batch and a separate date, which organises rotation better than one large vessel with the whole production.

Can vinegar be kept in steel for several days?

Stainless steel copes with an acidic environment, and for longer storage what matters most is a tight cover anyway. After emptying, the vessel is washed straight away, without leaving leftover brine.

How much space should be left above the liquid?

A practical rule is around two centimetres to the edge. That is enough to carry the container without spilling, while the contents still fit even after a weight pressing down the product is added.

Can such a container be frozen?

Steel withstands sub-zero temperatures, but when freezing liquids you have to remember expansion – the vessel is then filled with more headroom than when storing in the cold room.
