A GN 1/6 at a height of 150 mm is a 2.4 l container with a footprint of 176 × 162 mm. This proportion, a narrow base and considerable height, serves storage more than service, it holds a reserve of the ingredient while taking up the same shelf space as the shallow version.

For marinades and brines, depth is an advantage, since the product has to be covered with liquid. A flat container would need much more brine for the same effect, whereas here a few pieces of meat or vegetables stand submerged in a small amount of liquid.

In a display, this version does worse than a shallow one: from above only the top layer is visible, and product from the bottom is used up last. For a counter and a buffet it is better to take 65 or 100 mm, for the back of house, this one.

Will a 2.4 l container fit into a standard salad prep unit?

It depends on the depth of the well, salad prep units are usually designed for 100 mm, less often for 150 mm. The GN 1/6 footprint always fits, but the height needs to be checked in the specific unit, since the container may stick up above the worktop.

How should the contents be labelled, since the plastic is not see-through?

A dishwasher-soluble label or tape with the product description and date holds well on the wall. This solution is used for every opaque container that stands in the cold room for longer than one shift.

Can this vessel be filled with hot brine?

Boiling brine should not be poured directly into plastic, it is first taken off the heat and left until it stops steaming. If the product is to be covered while hot, a steel container is the safer choice.
