A GN 1/6 container 150 mm high holds 2.2 l with a 176 × 162 mm footprint. Polycarbonate works particularly well at this depth for products in brine, because the wall shows whether everything is submerged, without opening the container.
A tall, narrow container allows a stock of an ingredient to be kept on a sixth of a module's surface area. In tight cold rooms, this arithmetic determines how many items fit on a shelf.
An additional benefit of transparency at this depth is visible separation – in sauces and dressings, you can immediately see whether the contents need stirring before use.

Ask a questionBecause it shows the state of the product without opening: the brine level, separation, the presence of sediment. Every time a container is opened in the cold room, it's an air exchange and a risk of contamination.
It's a mid-range capacity in the GN 1/6 family: the 100 mm version has 1.6 l, and the 200 mm one already has 3.2 l. Choosing 150 mm makes sense where the stock needs to last a day, not a week.
Products straight off the heat aren't poured into plastic containers. Sauce is cooled in a flat container first, and only transferred into this one once it stops steaming.
