Gastronorm container 176x162x200 mm (stainless steel) KZ-GN1620 – how to choose the right one

The KZ-GN1620 Gastronorm container has a GN 1/6 footprint measuring 176 × 162 mm and a depth of 200 mm, giving 3.4 l. It is the deepest variant of this format – a narrow and tall vessel for products that take up a lot of volume with a small surface area.

Such a shape works well for ingredients stood upright. Celery stalks, asparagus, corn cobs or display cutlery stand in it resting against the walls, instead of lying flat and taking up several bain-marie fields.

With a liquid load you have to remember the mass. Three and a half litres is over three kilograms of contents, so a full container is lifted with both hands, and in a tall slot it is taken out carefully so as not to catch on neighbouring vessels.

Will 200 mm fit in a bain-marie with a standard well?

Not always – this is a depth that requires an appliance adapted for tall containers. In a shallow well the container simply will not go down to the collar or will get stuck at the bottom.

Does the product heat up evenly in such a deep vessel?

More slowly than in a shallow one. In a water bath, heat comes from the sides and the bottom, so with thick contents it is worth stirring them, rather than relying on conduction alone.

How does it differ from the 150 mm version apart from capacity?

Mainly in behaviour when the load is not full. At 3.4 l the vessel stays tall and empty at the top for a long time, which makes scooping harder – which is why 2.4 l tends to be more convenient with frequent replacements.
