The steel GN 1/6 container measuring 176 × 162 mm and 200 mm high holds 3.4 l. This is a storage vessel: it holds a substantial reserve of product while taking up a field the size of a sheet of paper in the cold room.
Managing surface area is the main argument here. In a refrigerated cabinet, what is most lacking is not volume but shelf space – and a tall container makes use of the clearance between levels, which stays empty with flat vessels.
Height also changes the way product is taken out. Instead of scooping from the top, a portion is more often poured off or transferred to a smaller working vessel, so the main reserve is opened less often and stays out of the cold room for less time.

Ask a questionHow much does a full container weigh?
With contents of a density close to water, about three and a half kilograms plus the vessel's own mass. This is a weight that is carried with both hands, especially when the container stands high on a shelving unit.
Can it be sealed tightly closed?
A GN 1/6 size lid covers the vessel and limits evaporation, but it is not an airtight seal. With products that have an intense smell it is worth additionally protecting the surface with film.
Will such a format fit in every GN refrigerated cabinet?
The footprint yes, the height not necessarily. The gap between the slides needs to be measured – with a tight shelf spacing, a 200 mm container will take up two levels instead of one.
