A polypropylene GN 1/6 at a height of 200 mm holds 3.4 l on a footprint of 176 × 162 mm. The proportions here are clearly vertical: the vessel is taller than it is wide, so it behaves like a small bucket fitted into the gastronorm standard.
Geometry like this gives the best ratio of capacity to shelf area occupied. Three and a half litres stand on an area where a shallow container would hold a litre, in a cramped cold room that is a real difference in the number of products on one level.
The price is stability and access. A tall, narrow vessel is easier to knock over when taken off a rack, and reaching the bottom needs a whole hand, so for products served with a spoon on an ongoing basis a shallower version is a better choice.

Ask a questionThree and a half litres is about three and a half kilograms, so technically yes. The problem is more the lack of handles and the high centre of gravity, which is why a full vessel is better held with both hands or carried on a tray.
It will cool, but slowly, the thickness of the layer here is the greatest in the whole GN 1/6 family. Hot product is first split between shallow vessels and only transferred to the tall one once it has cooled.
The same as for all other GN 1/6, i.e. KZ-GNP16 in polypropylene or KZ-GNT16 in polycarbonate. The lid rests on the edge of the footprint, and that is identical at every depth.
