In brief

  • A footprint of 176 × 162 mm is a GN 1/6 field, and a height of 65 mm gives a capacity of 1.0 l.
  • A litre in a shallow vessel passes through the cooling range faster than a litre in a tall one.
  • The container goes onto the combi steam oven's slides via a dividing frame.
  • Stainless steel withstands the temperature difference between the oven and the blast chiller.

Gastronorm container 176x162x65 mm (stainless steel) KZ-GN16065 S – how to choose the right one

The steel GN 1/6 container measuring 176 × 162 mm and 65 mm deep holds 1.0 l. This format is a working vessel in heat processing – it goes into the oven, comes out of it and goes to the blast chiller without the contents being transferred.

The flat proportion shortens the time spent passing through the temperature range in which the product should not stay longer than necessary. The heat-exchange surface is large relative to the volume, so cooling proceeds faster than in a tall vessel.

The same shape favours even steam cooking. The load lies in a thin layer, steam washes over it from above, and water after processing does not collect in a deep puddle but spreads across the bottom.

What the GN sizes mean and how to choose the depth – we explained it in the selection guide for this category.

Where it works

  • Steam cooking in a combi steam oven
  • Rapid cooling of portions in a blast chiller
  • Blanching vegetables in one-litre batches
  • Storing cooked ingredients in a refrigerated cabinet

FAQ

Frequently asked questions

Have not found your answer? Give the GN size and the intended use – we will select the containers.

Ask a question
Will the container rest on the oven's slides?

Not by itself, because the slides are spaced for larger formats. A carrying tray or a dividing frame for the GN 1/1 field is used, into which several 1/6 containers fit.

Can a dish go straight from the oven into the blast chiller?

Steel can take it, since it withstands thermal shock. The limit is the appliance itself and its capacity - a hot load raises the chamber temperature and lengthens the cycle for the other containers.

Are containers of this size stackable?

Empty, yes, and that matters for storage - the collar rests on the collar, so a dozen or more units take up little height on a shelf.
