The KZ-GN1410 Gastronorm container has a GN 1/4 footprint, meaning 265 x 162 mm, and a depth of 100 mm, giving 2.8 l. This is a size matched to venues where one bain-marie well serves four menu items at once.

A quarter of a GN 1/1 well is a format with a clearly rectangular footprint: the longer side is 265 mm, so the container sits conveniently across the counter, facing the guest. When serving onto a plate, tongs reach the opposite wall without bending over the well.

How many GN 1/4 containers fit on one GN 1/1 well?

Four, arranged two by two. The 265 x 162 mm dimensions, doubled, give 530 x 324 mm, practically the whole area of a 1/1 well.

When should this format be chosen over GN 1/3?

When one well needs to fit four items instead of three. GN 1/4 gives more sections at a smaller portion per section.

Is a lid needed when working in a bain-marie?

It limits evaporation and keeps the temperature between portions. For a station worked by a cook, a lid with a ladle cut-out is more convenient, since it stays in place throughout service.
