A stainless steel GN 1/4 container measuring 265 x 162 mm and 100 mm high has a capacity of 2.8 l. This size is popular in production: a batch is prepared in it, chilled in it, and later goes back into the oven in it.

Working in one container through the whole cycle shortens the list of steps and reduces the number of times the product is exposed to the surroundings. For production spread over two days, this matters more than the convenience of transfer alone.

Can this container be used to bake directly?

Yes, stainless steel is suitable for oven processing. For products that stick, it is worth greasing the bottom or using paper, since washing a smooth wall after browning can be tiresome.

How many portions does 2.8 l hold?

At a 150 g dose, that comes to a dozen or more portions of a dish in sauce. The exact number depends on the load's density, so a shift is usually planned around two filled containers.

How does it differ from the deeper 150 mm version?

In capacity - 4.0 l instead of 2.8 l - and in cooling speed. A deeper container holds heat longer, but also cools more slowly after processing, which can be a drawback for production done ahead of time.
