Gastronorm container 265x162x150 mm (stainless steel) KZ-GN1415 S – how to choose the right one

The KZ-GN1415 Gastronorm container is stainless steel in GN 1/4 format, measuring 265 x 162 mm and 150 mm deep, with a capacity of 4.0 l. The deep quarter is a container for a liquid load meant to sit warm and be served down through the whole service.

Four litres in this shape is a tall layer, but not so tall that dosing becomes awkward. A ladle reaches the bottom with a hand submerged barely to the wrist, and a container set in the well does not stick up above its neighbours by a jarring difference.

With a load like this, the fill order matters. The container is filled with hot contents before being placed in the bain-marie - the appliance is meant to maintain temperature, not warm up a cold product, since at four litres that would take too long.

Will the container fit a typical bain-marie well?

Usually yes, since 150 mm is the most commonly found working depth. Certainty only comes from measuring the well together with the water level, which raises the container's base by a few centimetres.

How long does four litres hold its temperature outside the appliance?

Longer than a shallow load, since the heat-losing surface is small relative to the volume. That is an argument for this format for short-distance transport, in an insulated carrier with a lid.

Is a lid with a cut-out needed for serving?

Yes, for a container ladled from throughout service. A lid with no cut-out has to be lifted off for every portion, so in practice it ends up set aside and stops doing its job.
