A GN 1/4 at a depth of 150 mm is 4.0 l on an area of 265 × 162 mm. A container like this stops being a display vessel and becomes a working one: suitable for curing, covering with brine and storing larger batches of a single ingredient.
Four litres corresponds to a sauce reserve for a whole shift in a small venue. Instead of three shallow vessels, one stands in the cold room, and during service a portion is poured from it into a smaller container at the station.
At this depth it is worth watching rotation, since product from the bottom is always used up last. Writing the date on the wall solves the problem faster than transferring the contents.

Ask a questionThey can, although the tall walls make it harder to work a whisk at the bottom. Shallow, wide vessels are more convenient for mixing, and this one works better for covering with liquid and setting aside.
Yes, polypropylene is inert to the acid from fermented products and does not corrode the way steel does after long contact with brine. It is just worth covering the vessel so the smell does not transfer to other products in the cold room.
Runners in GN cabinets are usually spaced a few centimetres apart, so a 150 mm container fits, but takes up two or three runner levels. With a full load it is worth working this out before ordering a batch.
