The KZ-GN1402 Gastronorm container is a steel tray in GN 1/4 format, measuring 265 x 162 mm and only 20 mm deep. It holds 0.5 l, but its point is not the capacity - it is that the product lies in a single layer.

A container like this works wherever portions must not touch or overlap. Pieces laid side by side keep their shape, do not stick together, and can be lifted out one at a time without disturbing the rest of the display.

The shallow base also gives heat the shortest path. In the oven, the load heats through evenly right away, and once removed it loses temperature just as fast - which is why this format suits short cycles, not holding.

Isn't 20 mm too shallow for a bain-marie?

For serving something warm, usually yes - half a litre spread in a thin layer cools very quickly. This format works better for a cold display and for short cycles in the oven.

How does it differ from the 40 mm version?

Double the capacity, from 0.5 l to 1.0 l, at the same footprint. At 40 mm the product can already be heaped up; at 20 mm it is still laid flat.

Does an ordinary GN 1/4 lid fit a tray this shallow?

Yes, the fit depends solely on the collar's 265 x 162 mm dimensions. For display, though, a clear cover is used more often, so as not to hide the contents.
