Gastronorm container 265x162x200 mm (stainless steel) KZ-GN1420 – how to choose the right one

The KZ-GN1420 Gastronorm container is in GN 1/4 format, measuring 265 x 162 mm, with a 200 mm depth, giving 5.5 l. This is the maximum capacity achievable on a quarter of a GN 1/1 well without going beyond the standard.

A reserve like this in one container makes sense where serving runs continuously and there is no time to top up the station. Five and a half litres usually covers a whole shift, so the cook does not leave the line to fetch another insert.

The price for this convenience is thermal inertia. A load of this volume takes a long time to reach temperature and just as long to lose it, so it is filled with a hot product and, when cooling, transferred to shallower containers.

Will a container like this fit in any bain-marie?

No. A 200 mm depth needs a well designed for tall containers - in a shallow appliance, the container will not settle on the collar, or will rest against the bottom.

How should the contents be cooled after service?

It is best to transfer them into shallower containers. Five litres in a tall container cools slowly enough that the product stays too long within the temperature range that should be avoided.

Will the lid from the 100 mm version fit?

Yes, since the collar has the same 265 x 162 mm dimensions. A lid is matched to the GN size, regardless of how deep the body underneath it is.
