Gastronorm container 265x162x200 mm (polypropylene) KZ-GNP1420 – how to choose the right one

A GN 1/4 container 200 mm high holds 5.5 l with a footprint of 265 × 162 mm. This is a storage version, three times the capacity of the shallowest variant of the same size, while taking up the same shelf space.

Five and a half litres is enough for a day's production of sauce or a week's reserve of vegetables in brine in a smaller kitchen. At this quantity it pays to prepare the ingredient once and dispense it in batches, instead of making everything fresh every day.

A deep plastic container is not meant for cooling. The contents release heat only through the narrow walls and the bottom, so shallow vessels are used for cooling, and this one only for storing the product once it has cooled.

Why should hot stock not be poured into it?

For two reasons at once: the plastic is not designed for high temperatures, and a 20 cm layer takes hours to cool in the cold room. Stock is cooled in a flat vessel and only poured into this one once it is cold.

How can a container this deep be emptied conveniently?

The simplest way is pouring the contents into a working vessel over the edge, the corners are rounded, so the stream can be guided. For thick products a spatula with a long handle helps.

Will the container stay upright on a trolley while it is moved?

At a height of 200 mm and with a narrow base, the centre of gravity is high, so on a trolley it is better to slide it into GN runners than to stand it loose on a shelf. The KZ-GNP14 lid limits spilling under braking.
