Gastronorm container 265x162x40 mm (stainless steel) KZ-GN1404 S – how to choose the right one

The KZ-GN1404 Gastronorm container is in GN 1/4 format, measuring 265 x 162 mm, with a 40 mm depth, giving 1.0 l. This is an intermediate format between a tray and a proper well: it holds a litre, yet keeps a low, convenient wall.

This proportion works well for cooling. A litre spread over a GN 1/1 quarter area forms a four-centimetre layer, through which heat escapes much faster than in a tall container - this shortens the cycle in the blast chiller.

The same feature is useful for marinating flat products. Fillets, slices and cutlets lie side by side, covered by a small amount of brine, so the marinade acts evenly and does not need to be prepared in excess.

When should 40 mm be chosen over 65 mm?

When fast cooling matters, or when the product needs to be laid in a single layer. At 65 mm, 1.8 l fits, but the load then sits thicker and takes longer to reach temperature.

Can a container like this go into a bain-marie?

Physically yes, if the well is not too deep. In practice, though, a litre in a flat container loses temperature quickly, so for serving something warm a deeper version is a better choice.

How much marinade is needed for one such container?

Enough that the product is just covered - with a low wall, that is usually a few hundred millilitres. This is a clear saving compared with a deep container, where the brine has to fill the whole volume.
