Gastronorm container 325x176x65 mm (AISI-304) KZ-GN13065 – how to choose the right one

KZ-GN13065 is a steel GN 1/3 container with a base of 325 × 176 mm and a depth of 65 mm, holding 2.5 l. This is the most common depth in catering, a compromise between a stock of product and the ability to reach the bottom without dipping in a whole hand.

Sixty-five millimetres gives a layer that holds temperature noticeably longer than shallower inserts, without turning service into digging down a well. That is why this size keeps coming back in the specifications of bain-maries, salad display cases and service trolleys alike.

The one-third format has an extra advantage here: with a width of 176 mm, three items can be placed side by side within the lane of one module, which with three sauces or three toppings gives a full range without needing extra equipment.

Why does 65 mm appear so often in the range?

Because it hits the middle of the range of use: it holds a real stock for a service while still letting the contents be scooped with a spoon without dirtying a sleeve. That is why this depth recurs in every format of the grid.

Is the container suitable for cooling?

A 65 mm layer cools much faster than 150 or 200 mm, so it works well for initial cooling, provided the container is left uncovered and has access to air from all sides.

How many portions does 2.5 l hold?

With a typical sauce portion measured in tens of millilitres it is enough for several dozen servings; for vegetable toppings, considerably fewer. The number of portions has to be worked out against your own recipe, since the differences between menu items here are huge.
