A GN 1/2 Gastronorm container measuring 325 × 265 mm and 100 mm deep holds 6.5 l. Half a module with a ten-centimetre wall is the most common choice for storing semi-finished products that return to the station every day.
Six and a half litres covers a medium-sized kitchen's daily requirement for one ingredient – sauce, filling, chopped vegetables. The near-square footprint makes stirring and serving easier, since every corner is about equally close.
In a GN cold cabinet, two such containers take up one level of runners. When planning the back of house, this is a convenient accounting unit: one level equals two ingredients at six and a half litres each.
