Gastronorm container 325x265x200 mm (AISI-304) KZ-GN1220 – how to choose the right one

KZ-GN1220 is a steel GN 1/2 container measuring 325 × 265 mm and 200 mm high, holding 12.5 l. This is the upper depth limit for this module half – a container for storage and production, not for serving from the line.

At twelve and a half litres of volume, the container starts to compete with a pot. The difference is that a pot won't fit into a rack's runners or a trolley slot, while this insert will. That's why it's used where a large batch of product must stay within the GN system from production through to the cold room.

Filling it to the brim rarely makes sense. At 200 mm depth, the last few centimetres are kept as a margin against tilting anyway, and a weight of over ten kilograms in an open container becomes difficult for one person to lift safely.

Is it worth filling this container right to the top?

Rather not. A margin of a few centimetres below the rim protects against spilling when carrying, and at a full weight of over ten kilograms every splash is hard to control.

Does this insert fit a standard cold cabinet?

It depends on the runner spacing. At 200 mm, one or two levels usually have to be skipped, so the cabinet's capacity calculation looks different than with 65 mm inserts.

How can the contents be cooled faster?

The simplest way is to split it between several shallower containers. A 200 mm layer releases heat from the centre very slowly, regardless of how cold the surrounding environment is.
