Gastronorm container 325x265x200 mm (polycarbonate) KZ-GNT1220 – how to choose the right one

A polycarbonate GN 1/2 container 200 mm high holds 11.0 l. With a footprint of 325 × 265 mm this is the largest-capacity vessel that fits on half a module in this version, and its shape is already closer to a crate than a display well.

Eleven litres covers a bulk batch of a single ingredient: vegetables soaking before processing, fruit in syrup, finished brine to be split into smaller vessels. The contents are viewed through the wall, so for layered products you can see the boundary between the solid and the liquid phase.

A filled vessel weighs over eleven kilograms and has a high centre of gravity. It is filled where it is going to stand, and emptied with a scoop, tilting a full container of this weight ends in spilling.

Can a product be poured into a vessel like this straight after cooking?

No, plastic containers are filled with a cooled load, and a twenty-centimetre layer would take many hours to cool in the cold room anyway. The product is cooled in shallow vessels and only then poured in here.

How can the bottom be reached conveniently at this depth?

With a ladle or a long-handled spatula; for the remainder it is simpler to pour the contents into a working vessel. Dipping a hand in when the container is three-quarters full is impractical and unhygienic.

Can the container be stood loose on a trolley shelf?

It is safer to slide it into the runners, since a narrow base with a height of twenty centimetres gives an unstable arrangement. On a flat shelf it is worth placing it against the back edge, away from the direction of travel.
