Gastronorm container 325x265x40 mm (AISI-304) KZ-GN1204 – how to choose the right one

KZ-GN1204 is a GN 1/2 container measuring 325 × 265 mm and 40 mm high, holding 2.5 l. A shallow insert with a large base: the same two and a half litres as in the narrower GN 1/3 container, but spread in a thin layer instead of piled up.

This difference determines the application. Two and a half litres in a 40 mm layer is a product that's equally accessible everywhere, that heats evenly in the oven and cools just as quickly after removal. A few centimetres of height can change the preparation time more than a change of equipment.

In a combi steam oven, the low wall doesn't shield the product from the air circulation, so the top browns over the whole tray surface, not just in the middle. For baking and browning, this is usually the right choice.

Is it better to choose 2.5 l in GN 1/2 or GN 1/3?

The volume is the same; the shape of the layer differs. GN 1/2 at 40 mm gives flat exposure and faster heat exchange; GN 1/3 at 65 mm gives a narrower strip in the slot and better insulation.

Is this insert suitable for a bain-marie?

For short services, yes, but with a thin layer the product loses moisture quickly. Without a lid or frequent topping up, the top starts to dry out.

How many of these containers fit in a full GN module?

Two, placed side by side along their longer sides. This is the basic split of the grid into halves.
