Gastronorm container 354x325x200 mm (AISI-304) KZ-GN2320 – how to choose the right one
KZ-GN2320 is a GN 2/3 container measuring 354 × 325 mm and 200 mm high, holding 18.0 l. It's the largest-capacity container in this group – a wide base combined with maximum depth gives a volume closer to a stockpot than to a typical Gastronorm insert.
At this scale, the whole logic of use changes. The container isn't carried full, isn't placed on a high shelf, and isn't filled to the rim. It stays in one place, receives the load, releases it in portions into smaller containers, and only returns to circulation once empty.
It's worth planning the washing route in advance. A container 200 mm high with a 354 mm side doesn't always fit in a hood-type dishwasher, and hand washing requires a sink deep enough to submerge it at least halfway.

In practice, rarely. The last few centimetres below the rim are left as a margin against spilling, so the actual working capacity is a few litres less.
Will the container fit in the dishwasher?
With a standard basket, it's sometimes borderline – it's the chamber height with the hood closed that decides. Before buying, it's worth measuring your own unit's clearance.
When does this size replace an ordinary pot?
When the contents need to go into the GN system: into a rack's runners, a trolley, or a blast chiller. A pot won't fit into any of these slots.
