Gastronorm container 354x325x40 mm (AISI-304) KZ-GN2304 – how to choose the right one

KZ-GN2304 is a GN 2/3 container measuring 354 × 325 mm and 40 mm high, holding 3.5 l. A shallow insert with a large base – three and a half litres spread over a wide surface instead of piled up in a narrow container.

For anything that needs to be baked, browned or reduced, this ratio is more favourable than a greater depth. Hot air washes over the whole layer, not just its top, so the result is even across the whole tray and doesn't require turning the load halfway through the cycle.

This size works well with a GN 1/3 insert of the same depth: together they fill a module, and the equal wall height allows both containers to be covered without level differences at the serving counter.

When does a shallow insert work better than a deep one?

Whenever it's about surface processing: browning, evaporation, searing. Deep containers hold temperature better but release moisture less well.

Will a container with a 354 mm side fit in every oven?

Ovens with GN runners accept this format, but in smaller, domestic-type units it can be too wide. The runner spacing needs to be checked before buying.

Is 3.5 l enough for a buffet?

Usually yes for starters, because the product is spread out and looks fuller than in a deeper container. For main dishes with high consumption, it's better to reach for 65 or 100 mm.
