Gastronorm container 354x325x65 mm (AISI-304) KZ-GN23065 – how to choose the right one

KZ-GN23065 is a GN 2/3 container measuring 354 × 325 mm and 65 mm high, holding 5.5 l. A universal depth on a large base: a stock like that of a sizeable insert, while access to the contents still doesn't require reaching in up to the elbow.

Five and a half litres spread over a wide base behaves differently at the serving counter than the same volume in a narrow container. The level drops more slowly, the dish looks full for longer, and when serving with a ladle, the whole container doesn't need tilting down to the last portion.

It's also a size that handles the whole cycle well: oven, blast chiller, cold room and bain-marie. It's neither so shallow that it dries out, nor so deep that it takes hours to cool, so one container handles the dish from production through to serving.

Why does 65 mm recur in every grid format?

Because this height balances product stock, cooling time and ease of scooping. Only the base area changes, and with it the number of litres.

Can one container handle the whole journey of a dish?

At this depth, usually yes – it fits in the oven, the blast chiller and the bain-marie. This reduces the number of transfers, and every transfer means a loss of temperature and a risk of contamination.

How many of these inserts fit in a GN module?

One, plus a GN 1/3 container alongside it. The two-thirds format doesn't divide the full module into equal parts, and that's exactly where its advantage lies.
