Gastronorm container 530x162x40 mm (stainless steel) KZ-GN2404 S – how to choose the right one

A GN 2/4 container made of stainless steel, measuring 530 × 162 mm and 40 mm high, with a capacity of 2.4 litres. A shallow format suited to heat treatment and fast cooling of the load.

The thickness of the layer determines the regeneration time. In a 40 mm container the product comes up to temperature within a dozen or so minutes, and when cooling, heat has a short path to the wall, which cannot be said of a load ten centimetres deep.

The narrow footprint also makes it easier to plan the load into the oven. Two containers on one level of runners can be slid in and taken out separately, so a batch that is ready earlier does not have to wait for the other.

Why are shallow containers recommended for cooling?

Because the rate of cooling depends on the thickness of the layer. The same mass spread over 40 mm instead of 150 mm passes through the critical temperature range much faster.

Will the container withstand use in an oven?

Stainless steel is designed for this and does not deform from baking temperatures. The limiting factor tends to be the lid instead, if it is made of plastic.

How many 2/4 containers fit on one level of 1/1 runners?

Two, placed lengthwise. Together they span 324 mm of width, practically a full GN 1/1 field.
