Gastronorm container 530x325x150 mm (polycarbonate) KZ-GNT1115 – how to choose the right one

A polycarbonate GN 1/1 container 150 mm deep is 18.5 l with a footprint of 530 × 325 mm. At this volume the vessel stops being carried and starts being wheeled, it works as a permanent part of a trolley load or as a production container standing on the worktop through the whole prep cycle.

Eighteen litres corresponds to a batch prepared once a day in a canteen or catering kitchen. The transparent wall lets you track how much of the batch has been used, without looking under the lid and without pouring the remainder into a smaller vessel to assess it.

A full container weighs close to twenty kilograms, so it is filled only in its final location. When transported on a trolley, the heaviest vessels go on the lower levels, so as not to raise the centre of gravity of the whole set.

Is the vessel filled before being placed on the rack?

With a load of close to twenty kilograms it is safer to slide the empty vessel into the runners and only then fill it. It is taken out the other way round: the contents are first scooped out, and only then is the container itself removed.

Doesn't this depth make cooling harder?

It does, considerably, a fifteen-centimetre layer releases heat mainly through the bottom and the walls. The product is cooled in shallow vessels and only transferred into this one once it has reached the cold-room temperature.

Will the container keep its shape when fully loaded?

On a flat shelf or in runners, the weight is carried by the bottom and the vessel behaves normally. The risk of deformation arises when a full container is lifted by one edge or by a corner.
