Gastronorm container 530x325x20 mm (AISI-304) KZ-GN1102 – how to choose the right one

KZ-GN1102 is a steel GN 1/1 gastronorm container with a footprint of 530 × 325 mm and a depth of 20 mm, holding 2.5 litres. The shallowest variant of the full format, in practice functioning as a tray with a low rim.

The whole advantage of this size lies in its area. The product sits in a single layer across the whole GN field, so every piece is in contact with hot air and none is pressed down by its neighbour.

The low rim is deliberate here, not a cost-cutting measure. When serving with a spatula, there is no need to lift the tool over a tall wall, which shortens every movement when portioning at speed.

How does this container differ from an ordinary baking tray?

In having a footprint matching the GN standard, which means it fits the same runners as the rest of the equipment and takes a 1/1 lid. A baking tray usually has a different format and does not fit a bain-marie.

Can sauce be served at 20 mm?

Only in small amounts and with the container standing steady. Two and a half litres spread over such a large area forms a layer of a centimetre or so, which splashes at every movement.

How much space does it take up in an oven?

One level of runners, like any 1/1 container. At this height the oven can be loaded with a full set without skipping rails.
