A steel GN 1/1 gastronorm container measuring 530 × 325 mm and 20 mm deep holds 2.5 litres. A flat format for laying out product in a single layer and for storing ready portions.

In the cold room, this size solves a problem that is not obvious at the time of purchase: it lets a lot of items be kept within a small height. Several such containers stacked one above another fit where a single 100 mm one would stand.

The drawback is sensitivity to tilting. The contents lie shallow and close to the edge, so the container is best transported level, ideally on trolley rails, rather than carried by hand on stairs.

Can a 20 mm container be covered with a lid?

Yes, but this leaves practically no clearance above the product. For dishes with sauce, the 40 mm variant with the same lid is a better choice.

How does its capacity compare with deeper versions?

Two and a half litres is the least in the whole 1/1 format, the 65 mm version holds 9.0 l, and the 200 mm one as much as 28.0 l. The base area is identical across all of them.

Is it suitable for freezing portions?

Yes, and here shallowness actually helps, since a thin layer freezes through faster. You just need to bear in mind that steel does not show the contents, so portions need to be labelled.
