A polypropylene GN 1/1 container 200 mm high holds 28.0 l. This is the extreme item in the whole family: a full 530 × 325 mm module with the maximum depth provided for in the Gastronorm standard.
At this volume, the container replaces a vat. It works well for fermenting, curing and soaking large batches of product, where what matters is that everything is submerged in one tank and has a single date.
A full container is close to thirty kilograms of load – a weight that isn't carried by hand. It's filled at its destination and emptied by scooping, not tilting.

A whole level in terms of surface area, and usually two or three runner spacings in height. When planning a cold room, this container is counted separately, because it rules out neighbouring shelves.
Polypropylene is inert to salt and organic acids, so prolonged contact with brine doesn't harm it. Pigments from vegetables, however, can permanently discolour the walls, which doesn't affect the container's usability.
