Gastronorm container 530x325x40 mm (AISI-304) KZ-GN1104 – how to choose the right one

KZ-GN1104 is a steel GN 1/1 Gastronorm container measuring 530 × 325 mm and 40 mm deep, with a capacity of 5.5 litres. An intermediate variant between a flat tray and a serving well.

Forty millimetres is a depth for dishes that need to look good, not just fit. The portions sit in a single layer, the sauce comes halfway up, and the guest sees the contents of the well instead of having to guess from the surface.

On a buffet, this height works well with the turnover rate. Five and a half litres goes down in a reasonable time, so the container returns to the kitchen before the product has a chance to age under heat.

Is 40 mm a sufficient depth for a dish with sauce?

For portioned dishes, such as meat rolls or fillets in sauce, usually yes. For dishes served with a ladle in larger quantities, 65 or 100 mm is more convenient.

Is the container suitable for baking?

Stainless steel withstands oven temperatures, and a shallow layer bakes evenly. After cooking, the same container can go straight to the buffet, without transferring.

How many portions fit on this surface?

It depends on the portion size, but it's calculated from the 530 × 325 mm base area, not the capacity. For a single layer, this is usually the basic criterion for choosing this size.
