Gastronorm container 650x530x40 mm (AISI-304) KZ-GN2104 – how to choose the right one

KZ-GN2104 is a steel GN 2/1 Gastronorm container with a 650 × 530 mm footprint and a depth of 40 mm, with a capacity of 12.0 litres. A shallow variant of the largest format, combining a large surface area with the ability to serve dishes in sauce.

Twelve litres on a single level of runners is a setup for mass catering. One menu item then serves the whole room, and staff don't have to interrupt serving to swap in a second container.

A depth of 40 mm has another effect, visible only with such a large footprint: the product isn't compressed by its own weight. With a layer of over ten centimetres, the bottom portions across 0.34 m² would break apart under the pressure.

Is 12.0 l enough for the whole room?

For one item at a typical portion weight, usually enough for several dozen portions, but this needs recalculating for your own serving. The advantage is that the whole quantity is available without changing containers.

Do several of these containers fit in a 2/1 oven?

Yes, at a height of 40 mm, all levels can usually be filled without skipping rails. The number of loads is given in the specific oven's data sheet.

How does it differ from two 1/1 containers at 40 mm?

In capacity – two 1/1 containers together give 11.0 l, while a single 2/1 holds 12.0 l. On the other hand, the two smaller ones can be swapped separately and each can be carried by one person.
