KZ-GNC13 is a steel lid for a GN 1/3 gastronorm container measuring 325 × 176 mm. The 1/3 format is one of the most commonly used divisions of a full field, and the lid fits every depth of it.

Does the lid fit a polycarbonate container?
Yes, as long as it has a GN 1/3 footprint. The standard describes the dimensions of the vessel, so the material of the container and the material of the lid do not have to match.
Does closing a well in a bain-marie make sense?
Between portions, yes, it reduces evaporation and heat loss. During continuous serving the lid usually lies to one side, since removing it for every portion slows down service.
