A stainless steel lid for a GN 1/3 gastronorm container measuring 325 × 176 mm. A rigid closure intended to circulate between the cold room, the prep station and the servery line.

How should lids be stored so they do not deform?

Best vertically, in a basket or a divider. A stack on a worktop slides easily, and a falling lid most often bends right at the corner.

Does a bent corner rule out a lid?

It depends on the extent. A slight deformation is mainly a problem for storage, since it creates a gap through which the product dries out faster than over the rest of the surface.

Does a steel lid heat up over a bain-marie well?

Yes, it picks up heat from the steam and from the edge of the container. After lying on a hot container for a while, it is removed with a cloth, not a bare hand.
