Once it has cooled. Closing a hot container traps heat and steam inside, so the product cools more slowly than it would standing uncovered in a blast chiller.
Can a second container be placed on top of a closed 1/2 one?
With a rigid lid, yes, as long as the lower vessel is not filled right up to the edge. The weight is then carried by the rim, not by the contents.
Will the lid fit in a dishwasher basket?
A footprint of 325 × 265 mm fits into a typical 500 × 500 mm basket placed normally. When washing it together with containers, it is worth separating them so water reaches both sides.
