KZ-GNS11 is a silicone lid for a GN 1/1 Gastronorm container measuring 530 × 325 mm, made of MVQ silicone rubber. A flexible closure for the largest of the basic Gastronorm fields.
On such a large surface, the way the lid is removed matters. Silicone lifted from the centre bends and lifts the whole edge at once as a side effect – it's easier to pull one corner and slide the closure off along the longer side, keeping it over the container.
An elastic edge running over a metre and a half in perimeter, though, clings tighter than any rigid sheet. This is an argument for products that dry out fastest in the cold room, because their whole full-field surface is exposed.

By pulling a corner and guiding the closure along the longer side. Lifting from the centre bends the material and collects condensation in a dip, which then runs off onto the worktop.
Is a silicone 1/1 lid suitable for a bain-marie?
The manufacturer describes it as a closure for storage and transport. For working under heat and for thermal processing, a steel lid of the same size is used.
Does the closure still fit tightly at this size?
Yes, the elasticity works around the whole perimeter regardless of its length. Fitting it just requires pressing the edge down in sequence, rather than in one motion as with small formats.
