Does the catch size follow directly from the panel thickness?

There is no simple conversion here - it depends on the frame construction and how the door is set. So instead of calculating from panel thickness, it simply needs to be measured.

What happens when the catch is too small for the door?

The handle's bolt does not go in to full depth, so the door appears to close but does not press the gasket in. The result is frost at the edge and rising energy use.
