Commercial kitchen hood
The job of a hood is to extract the steam, fumes and odours released during cooking, frying and other heat treatment of food. A complete lack of ventilation can cause shortness of breath and discomfort among staff.
Water collecting on various surfaces in the kitchen can lead to dampness everywhere. Dampness, in turn, encourages the growth of fungi and mould. These must not be present where food is prepared, which is why a commercial kitchen hood has to work efficiently and be fitted with suitable filters.
Filters – categories
A hood can be fitted with various types of commercial kitchen hood filters. We can distinguish grease filters, which remove grease particles from the kitchen air, and carbon filters, which absorb odours and other harmful particles.
Baffle filters
These are very popular filters that every commercial kitchen hood must have. They are also known as grease traps, because their job is to collect grease particles. The accumulated grease can be easily removed through the hood’s oil drain valve.
Baffle filters – how they work
The channels visible inside a baffle filter draw in the air. The air then travels a long way before it exits on the other side. On its way, it changes direction many times. Meanwhile, contaminants are captured by the filter, and the path the air follows looks like a labyrinth. Hence the name labyrinth (baffle) filters.
To increase protection, additional filters or other products that improve hood performance are also used. One example is a ventilation valve for hoods. A commercial kitchen hood equipped with such a valve significantly improves staff comfort and also makes it easy to control the direction of the air supply.
Mesh filter
Mesh filters are also fitted to hoods. They are less popular than baffle filters, but they too have their users. They are made exclusively to the customer’s specification, which guarantees a filter that fits the hood well.
The filters are made of AISI 304 stainless steel, which provides protection against corrosion.

Hoods are widely used in food service establishments. They can be found in kitchens of many different types of facilities. Depending on the material the grease traps are made of, they are also used in other industrial facilities.
