Parts for a pan are chosen for the specific appliance, not for the category

A boiling pan works at boiling point and under a load the rest of the back of house does not see. What wears out fastest are the moving parts and those in contact with the hot contents: the drain valve, the hinges of a heavy lid and the seals. These parts are replaced during service life, not together with the appliance.

When ordering a spare part what matters most is that it fits the specific pan – the type of part alone is not enough. We give the connection in inches where the manufacturer declares it; for the remaining items it is worth stating the manufacturer and the model, and for valves also the diameter of the outlet in the pan.

Greases for valves are a separate item. A boiling pan drain valve works at high temperature and in contact with food, so it is lubricated with a preparation intended for that use – not with whatever happens to be in the workshop.
