A drain in a catering sink works differently from a domestic one: grease, food waste and boiling water pass through it, and a domestic trap starts to leak under those conditions after a few months. The drain is chosen for the diameter of the hole in the bowl and for the waste connection, the overflow pipe for the height of the bowl, the trap for the space under the worktop. How to choose
The drain is chosen for the connection, the hole in the bowl and the way it closes
The first dimension is the connection – most often 1 1/2 or 1 1/4 inches. It has to match the installation and the hole in the sink bowl; when replacing a drain in a finished workstation it decides whether the job takes a quarter of an hour or calls for rework.
The second decision is how the drain closes. A plug on a chain is the simplest and the cheapest, but it slips out of the hand and gets lost. A drain with a pull rod is closed by a lever at the front of the workstation, so the cook does not reach into boiling water. A valve with an overflow limits the water level on its own and protects the worktop from flooding.
The third point is the overflow pipe. In a catering sink the water level has to be controlled, because the bowls are deep and fill quickly. The overflow carries off the excess before the water runs over the rim.
Bain-marie accessories are a separate group: drains and plugs working in hot water, at a constant temperature held for hours. The material matters more here than in a cold sink.
