How to choose

First the mounting method, then the dimensions and the sheet thickness

A weld-in bowl gives a single continuous surface with no gap where it meets the worktop – it is easier to clean and dirt does not collect in it. It does, however, require welding on site or in the workshop, which means the decision is taken before the worktop is made. A drop-in bowl sits on a ready-made cut-out and is sealed around its perimeter; it can be replaced without touching the worktop.

Sheet thickness is the parameter by which the difference shows up in daily work. A thinner bowl drums when water is run into it and deforms more easily under the knock of a pot; a thicker one is heavier and dearer, but keeps its shape for years. In high-turnover kitchens it is a choice that pays for itself within a single refit.

The 600 and 700 mm lines are the installation depth of the station. The choice follows from the run the sink stands in – a bowl from the 700 line cannot be fitted into a worktop 600 mm deep. This is checked at the design stage, not at delivery.

The drain is chosen together with the bowl: the connection, the way it closes and whether the bowl has an overflow. A bowl with an overflow limits the water level by itself, which on deep catering bowls is a safeguard, not an extra.
